The Star Sydney's Japanese restaurant since November 2011, opened by ex-Nobu Executive Chef Chase Kojima, born and raised in San Francisco. Modern Japanese with the casino-precinct trappings: tasting menus, sake program, bar program, room designed for the long evening. The hard-to-book six-seat omakase counter (19 to 21 courses, daily-changing) is the booking that ranks above the main dining floor; reservations open months in advance.
