Federico Zanellato and his wife and head sommelier Michela Boncagni's two-hat waterfront on Wharf 10 at Pyrmont, opposite The Star. The kitchen fuses Italian hospitality with Japanese technique that Zanellato learned at Tokyo's Ryugin (three Michelin stars) and earlier at Ormeggio at the Spit, where he spent four years and won two hats himself. The 16-course tasting menu plus omakase is the proper booking. The harbour view, the precise pasta course, and Boncagni's wine matching are the three reasons. Closed Sunday and Monday.
