Peter Gilmore's Opera House restaurant under Head Chef Rob Cockerill, ten years into the partnership and held at two hats in the 2026 Good Food Guide (16/20). Three rooms in one: the main Restaurant for the three-course set menu, The Cured & Cultured bar at the entry for à la carte, and Bennelong Bar for the cocktail-and-snack stop. With Quay closing on 14 February 2026, this becomes the only place to taste Gilmore's current kitchen. The architecture, on the Opera House podium with the Bridge framed across the Cove, is the unfair advantage.— Yarranabbe Editorial
