The 1929 art-deco beach pavilion at Balmoral, run by the Pagent family since Serge Dansereau's departure in March 2021 after twenty-plus years. Multi-format: the two-hat Bathers' Restaurant upstairs under Executive Chef Aaron Ward (since late 2023), an all-day bistro on the ground floor, the Thai-leaning Betel Leaf, and a takeaway kiosk on the sand. The 2025 L'Enclume residency (Simon Rogan in residence 16 July to 24 August, fourteen-course tasting at $590) was the year's benchmark booking. The position on Balmoral Beach, with the Heads in profile north, is one of the best dining views in Sydney.— Yarranabbe Editorial
