Opened December 1999 by Matt Moran (chef) and Peter Sullivan (restaurateur), partners since the Paddington Inn Bistro of 1991; now Moran's flagship under Solotel ownership, with Tom Gorringe as Executive Chef since 2021 (previously Bentley and The Gantry). Two hats every year since 2013, thirty-five Good Food Guide hats over the restaurant's life. The view, Opera House and Bridge from the same window, is the asset. The five- or eight-course tasting is the proper booking. The pre-theatre two-course is the underused trick.— Yarranabbe Editorial
